Lemon and
Clove Tart Dough
This crust works well
with lemon flavored pies and tarts.
1/2
c butter |

t lemon zest |
1/3
c sugar |
1/4
t salt |

yolk |
1/8
t cloves |
1/2
t vanilla |

1/3 c flour |
Mix butter with
sugar. Add yolk, vanilla, zest, salt and cloves. Add in flour; mix
until just incorporated. Turn onto floured surface and form into
a flat ball. Wrap and chill until use. Let soften slightly before
using.

Butter
Tart Crust
This dough is great for
tartlets and is easy to make and work with.

1/4 c flour |

T butter, chilled |
1/3
c powdered sugar |

yolks |
1/2
t salt |
1
T cold water |
In processor,
blend flour, sugar and salt. Add in butter; process until the mixture
resembles coarse meal. Add in yolks and water and process until
moist clumps are formed in the dough. Turn out onto lightly floured
surface and gather into a ball. Flatten, wrap and chill before use.
