Banana
Bread

c shortening |
1
3/4 c flour |
2/3
c sugar |
2
3/4 t baking powder |
2
eggs |
1/2
t salt |
2
large mashed ripe bananas |

Preheat
oven to 350°F. Lightly grease a small loaf pan, 4 1/2 x 8
1/2".
Cream
shortening until smooth. Add in sugar and beat until fluffy. Add
eggs and beat until thick and light in color. Add in dry ingredients,
blending thoroughly. Spread batter into prepared pan and bake
for about 60 minutes or until bread tests done. Let bread rest
in baking pan for 15 minutes before turning out onto cooling rack.
