Peanut
Pie
This
unusual pie has a layer of roasted peanuts and coconut.
Unbaked
9" pie shell |

1/2
c sugar |
3
eggs, well beaten |
2
T flour |
2
T butter |
1/2
t salt |
1
c roasted peanuts |
1
c light corn syrup |
1/2
c coconut |
1/4
c water |
|
Combine
sugar, flour and salt. Add syrup and water and mix well. Put in
saucepan and boil gently 3 minutes. Remove from heat and slowly
whisk into beaten eggs, whisking all the while, and add in the butter.
Spread peanuts and coconut on bottom of the pie shell. Pour filling
over the nuts. Bake at 425°F for 10 minutes, then reduce heat
to 350°F and continue baking for about 35 more minutes, until
pie filling is set.
