Pineapple
Cookies
This
recipe uses crushed pineapple, making it an unusual addition to
your cookie-baking repertoire.

c brown sugar, packed |

t baking soda |

c shortening |

t baking powder |

t vanilla |

t salt |

Preheat oven to 350°F.
Cream
shortening with sugars. Add in vanilla, then eggs, mixing well after
each addition. Add pineapple and stir until blended. Combine dry
ingredients, then add to pineapple mixture. Drop dough by spoonfuls
onto baking sheet and bake for about 10 to 12 minutes, or until
desired doneness. Makes between 4 and 5 dozen, depending on spoonful
size.
