This is a lightly spiced fruitcake with gumdrops baked inside.
Gumdrop Spice Fruitcake
Part 1
- 2 cups applesauce
- 2 cups sugar
- 1/2 cup shortening
- 2 cups raisins
Part 2
- 2 cups small gumdrops (do not use black)
- 1 cup shredded coconut
- 1 cup dates, chopped
- 2 cup chopped nuts
- 1 cup flour
- 2 eggs, beaten
Part 2
- 2 cups sifted flour
- 2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon salt
Procedure
- Preheat oven to 300 degree F. Bring to boil everything in part 1 and set aside.
- Put gumdrops, coconut, dates and nuts in a bowl. Sift the flour over them and toss. Add eggs and mix.
- Sift all of part 3. Mix into part 2 alternately with part 1. Bake in greased and floured 10 tube pan for about 2 hours. A pan of water in the bottom of the oven will keep cake from getting too brown, but it adds to the cooking time, also.
