This is one of my favorite things to bring to a party when I'm asked to bring a dessert. It's simple to make, and looks pretty once the ganache is poured on top, and if you are using one - use your favorite recipe. Don't be concerned if the center falls during baking - it's supposed to do that, and makes a nice place for the ganache to rest. As the name states, there is no flour in the recipe.
Flourless Chocolate Cake
Ingredients
- 185g 60% dark chocolate, chopped
- 70g whole butter
- 5 egg yolks
- 85g granulated sugar
- 5 egg whites
- 28g granulated sugar
Procedure
- In a bain marie, melt the chocolate and butter together. Cool to room temperature.
- Whip the egg yolks with the 85g of sugar until light. Whip the egg whites with the 28g of sugar until firm peaks form. Fold the chocolate mixture into the egg yolk mixture. Add in about a third of the whipped whites into the chocolate/egg batter until smooth, then lightly fold the rest of the whites into the mix.
- Transfer the batter into a sprayed springform pan. Bake until the center tests done, about 35 minutes.
- Let cool, then top with melted ganache, or dust with powdered sugar and serve with whipped cream.
