blue cornmeal crêpes recipe

Blue Cornmeal Crêpes

Ingredients
  • 1/4 cup all-purpose flour
  • 1/4 cup blue cornmeal
  • 1 teaspoon salt
  • 4 eggs
  • 1 cup milk
  • 2 oz. clarified butter
Procedure
  1. Stir the dry ingredients together, and add in the wet ingredients. Whisk until smooth. Let stand for about 30 minutes before using. Check the consistency before making the crêpes, and add in additional liquid if it becomes too thick after resting.
