Sugar Tea Rags
For a change of pace, these cookies are deep fried rather than baked. Try to keep the hot fat at a constant temperature range of 375°F to 385°F for optimal results. Have a bowl with sifted confectioner's sugar on hand for coating them before serving.

tablespoons milk |

teaspoon salt |

tablespoons sugar |

cups flour |

tablespoons melted butter or shortening |

Oil, as needed for frying |

Confectioner's sugar, for dusting |

Beat
eggs until light. Add in milk and sugar, then shortening and vanilla,
last the flour and salt. Take about one quarter of the dough and
roll wafer thin, very thin. Cut into pieces and prick with a fork, or after rolling mark with a dough docker and then cut into pieces.
Brown in hot oil until golden on both sides, about 30 seconds. Transfer
to paper towels and dust with confectioner’s sugar before serving.
